Soy Braised Short Ribs

Ingredients:

  • 3–3.5 lb beef short ribs

  • Kosher salt & black pepper

Braising Liquid:

  • 1 tbsp neutral oil (for searing)

  • 1 small white onion (sliced)

  • 3 green onions (cut into 2-inch pieces)

  • 5 cloves garlic (minced)

  • 1 tbsp fresh ginger (grated)

  • ¼ cup brown sugar

  • ¼ cup mirin

  • 1/4 cup low sodium soy sauce 

  • 1½ - 2 cups beef broth

  • 2 tbsp oyster sauce

  • ½ tsp Orange zest

Instructions:

Season & sear:

  • Pat short ribs dry and season generously with salt and pepper

  • Heat oil in a Dutch oven over medium-high heat

  • Sear ribs on all sides until deeply browned (2–3 minutes per side)

  • Remove and set aside

Build the braise:

  • In the same pot, sauté white onion, green onion, garlic, and ginger for about 1 minute until fragrant

  • Add brown sugar, mirin, soy sauce, beef broth, and oyster sauce

  • Stir and bring to a gentle simmer

Braise:

  • Return short ribs to the pot (they should be mostly submerged)

  • Zest an orange over ribs   

  • Cover and transfer to a 375°F oven

  • Cook for 2½–3½ hours, until fork-tender

Finish (optional but recommended)

  • Skim excess fat from the top

  • Simmer uncovered on the stove for 10–15 minutes if you want the sauce thicker and glossy

Serve:

With bok choy and rice or potatoes.

Quick Tips:

If the liquid reduces too much during cooking, add a splash of broth
