Soy Braised Short Ribs
Ingredients:
3–3.5 lb beef short ribs
Kosher salt & black pepper
Braising Liquid:
1 tbsp neutral oil (for searing)
1 small white onion (sliced)
3 green onions (cut into 2-inch pieces)
5 cloves garlic (minced)
1 tbsp fresh ginger (grated)
¼ cup brown sugar
¼ cup mirin
1/4 cup low sodium soy sauce
1½ - 2 cups beef broth
2 tbsp oyster sauce
½ tsp Orange zest
Instructions:
Season & sear:
Pat short ribs dry and season generously with salt and pepper
Heat oil in a Dutch oven over medium-high heat
Sear ribs on all sides until deeply browned (2–3 minutes per side)
Remove and set aside
Build the braise:
In the same pot, sauté white onion, green onion, garlic, and ginger for about 1 minute until fragrant
Add brown sugar, mirin, soy sauce, beef broth, and oyster sauce
Stir and bring to a gentle simmer
Braise:
Return short ribs to the pot (they should be mostly submerged)
Zest an orange over ribs
Cover and transfer to a 375°F oven
Cook for 2½–3½ hours, until fork-tender
Finish (optional but recommended)
Skim excess fat from the top
Simmer uncovered on the stove for 10–15 minutes if you want the sauce thicker and glossy
Serve:
With bok choy and rice or potatoes.
Quick Tips:
If the liquid reduces too much during cooking, add a splash of broth
