Seafood Bake with Garlic Butter
Ingredients:
Seafood & Base:
1–1.5 lb Dungeness or snow crab (clusters/legs)
1 lb shrimp (peeled & deveined)
2 lobster tails (split)
4 boiled eggs
3 ears corn (cut into thirds)
1.5 lb red or gold potatoes (halved)
For the Pasta & Sauce:
1 tbsp salt-free seafood seasoning
1–1½ tsp salt
1 tsp lemon pepper
½ tsp cayenne (adjust to heat preference)
1 tsp paprika
For the pan:
½ cup chicken broth
6 tbsp unsalted butter (sliced)
Garlic Butter Sauce
4 tbsp unsalted butter (to start)
5–6 cloves garlic (minced)
1 small shallot (finely chopped)
1 sprig rosemary
2–3 sprigs thyme
1 bay leaf
1 tbsp brown sugar
4 tbsp unsalted butter (additional)
1–1½ tsp Old Bay seasoning
½ cup heavy cream
1–2 tbsp fresh lemon juice
Instructions:
Boil the base:
Boil corn and potatoes in well-salted water for ~15 minutes, until potatoes are fork-tender but not soft. Drain immediately.
Remember: they’ll cook again in the oven, so slightly underdone is perfect.
Assemble:
Preheat oven to 400°F
Add corn and potatoes to baking dish
Pour in ½ cup chicken broth
Layer crab, shrimp, lobster, and eggs on top
Season & bake:
Sprinkle all seasoning evenly over seafood
Add sliced butter across the top
Cover tightly with foil
Bake 15–20 minutes
Make sauce:
Sauté garlic + shallots in 4 tbsp butter
Add herbs + brown sugar
Add remaining 4 tbsp butter and melt
Stir in Old Bay, heavy cream, lemon juice
Simmer 3–5 minutes until slightly thickened
Finish:
Pour sauce over seafood bake
Serve:
With white rice + lemon slices.
